Black Bean Salad

Today I wanted to spruce up my regular every day salad, which if I'm honest, is usually less than exciting. I've also been obsessed with beans lately so what better than to mix together this black bean salad to eat either on its own, add on top of lettuce, or add it onto bread like I did in the photos below. Quick, refreshing, and healthy. Doesn't get easier than that!






  • 1 medium bell pepper

  • 1/2 red onion 

  • 1 cup of black beans

  • 1 cup of corn

  • 2 tablespoons of oil ( I used sesame oil)

  • 1 tablespoon of vinegar ( I used apple cider)

  • 1 teaspoon cumin

  • salt/pepper for taste

  • optional - basil leaves



  • Can opener (if using canned beans/corn)

  • Colander to rinse beans

  • Cutting Board

  • Mixing bowl

  • Measuring spoons

  • Mixing spoon

  • Knife



  1. Rinse and dice bell pepper. Peel and dice onion. 

  2. Drain and rinse beans and corn. 

  3. Mix all ingredients together in a bowl. 

  4. If placing on bread like I did, try a hearty one like rye bread. Perfect combination in my opinion. 

  5. Optional - spread hummus or cream cheese before adding the salad on top. Sprinkle basil leaves at the end if using. 

  6. Enjoy!
