Easiest Homemade Tomato Sauce


It's summer time so tomatoes are taking over my CSA boxes lately. Although this recipe uses canned tomatoes, I threw in some fresh ones to enhance the flavor. This could be used as a sauce with pasta or as a base for a homemade pizza at home. I just had some of this sauce with leftover vegetables and tofu. It's pretty easy to find a use for it and be sure to freeze some to have on hand. Enjoy!

Ingredients

  • 1 medium onion

  • 4 cloves of garlic

  • 4 medium carrots

  • 1 fresh tomato (optional)

  • 1 tablespoon coconut oil

  • 1 teaspoon dried basil (or handful of fresh basil)

  • 1/2 teaspoon dried oregano

  • dash of salt and pepper for taste

  • 1 (28oz) can crushed tomatoes

Materials

  • Can Opener

  • Cutting board

  • Pot with lid

  • Measuring spoons

  • Mixing spoon

  • Knife

Directions

  1. Rinse, peel, and dice carrots. Peel and dice onions. Mince garlic

  2. Heat oil in a pot over medium heat. add onion, garlic, and carrots. cook until onion is soft.

  3. Add basil, oregano, salt, pepper, and tomatoes (fresh/canned). Bring to a boil.

  4. Cover and reduce heat. Simmer for 15 minutes.
