Easiest Homemade Tomato Sauce
It's summer time so tomatoes are taking over my CSA boxes lately. Although this recipe uses canned tomatoes, I threw in some fresh ones to enhance the flavor. This could be used as a sauce with pasta or as a base for a homemade pizza at home. I just had some of this sauce with leftover vegetables and tofu. It's pretty easy to find a use for it and be sure to freeze some to have on hand. Enjoy!
1 medium onion
4 cloves of garlic
4 medium carrots
1 fresh tomato (optional)
1 tablespoon coconut oil
1 teaspoon dried basil (or handful of fresh basil)
1/2 teaspoon dried oregano
dash of salt and pepper for taste
1 (28oz) can crushed tomatoes
Pot with lid
Rinse, peel, and dice carrots. Peel and dice onions. Mince garlic
Heat oil in a pot over medium heat. add onion, garlic, and carrots. cook until onion is soft.
Add basil, oregano, salt, pepper, and tomatoes (fresh/canned). Bring to a boil.
Cover and reduce heat. Simmer for 15 minutes.
