Good ol' Banana Bread
I'm on a baking spree apparently. I just can't help it! Baking for me is more enjoyable than cooking. If you follow the recipes, it is hard to mess up (usually). Plus, baking is more of a treat than cooking, especially if you cook everyday. Anyways, I made some banana bread with some over ripe bananas and I'm very happy with the result!

Ingredients
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
1 cup sugar
4 very ripe bananas
1 tsp vanilla
1/2 cup vegetable oil
1 tsp cinnamon
optional: chocolate chips or walnuts
Directions
Preheat oven to 350 degrees F.
In a medium bowl, combine the flour, baking soda, baking powder, and salt; set aside.
In a large bowl, cream together the eggs and sugar. Stir in the mashed bananas, vanilla, oil, and cinnamon.
Stir in the flour mixture, a third at a time, until just combined.
Pour the batter into a buttered or parchment lined loaf pan.
Bake for about 1 hour, until a toothpick inserted in center of cake comes out clean.
Let cook in pan for 15 minutes. Invert onto a wire rack, then turn upright to cool completely.
