Good ol' Banana Bread

I'm on a baking spree apparently. I just can't help it! Baking for me is more enjoyable than cooking. If you follow the recipes, it is hard to mess up (usually). Plus, baking is more of a treat than cooking, especially if you cook everyday. Anyways, I made some banana bread with some over ripe bananas and I'm very happy with the result! 

 

 

Ingredients

  • 2 cups flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp salt

  • 2 eggs

  • 1 cup sugar

  • 4 very ripe bananas

  • 1 tsp vanilla

  • 1/2 cup vegetable oil

  • 1 tsp cinnamon

  • optional: chocolate chips or walnuts 

 

Directions

  1. Preheat oven to 350 degrees F. 

  2. In a medium bowl, combine the flour, baking soda, baking powder, and salt; set aside. 

  3. In a large bowl, cream together the eggs and sugar. Stir in the mashed bananas, vanilla, oil, and cinnamon.

  4. Stir in the flour mixture, a third at a time, until just combined. 

  5. Pour the batter into a buttered or parchment lined loaf pan. 

  6. Bake for about 1 hour, until a toothpick inserted in center of cake comes out clean. 

  7. Let cook in pan for 15 minutes. Invert onto a wire rack, then turn upright to cool completely.
