Make This Rice & Bean Salad for an Easy Summer Salad!

It is summer time and one of the best (and easy!) meals to make, in my opinion, are salads! Over the next few days I will share some of my current favorites. The first one is a rice and bean salad. Mixed with a variety of vegetables, you could throw anything in this and it will come out delicious. Enjoy!

 

 

Ingredients

  • 1 cup cooked rice

  • 1/2 cup corn (frozen or canned)

  • 1/2 cup cooked red kidney or black beans

  • 1/2 cup peas 

  • 1/2 bell pepper, diced

  • 2 small pickles, diced

 

for dressing: 

  • 3 tbsp lemon juice

  • 2 tsp dijon mustard

  • 2 tbsp of mayonnaise 

  • 3 tbsp of plain greek yogurt

  • salt/pepper to taste  

 

Directions 

  1. Mix rice, beans, and vegetables together in a bowl

  2. In a separate bowl mix dressing ingredients together. Pour over mixed rice and beans. 

  3. Let cool in fridge for 20 minutes for a refreshing summer salad!
