It is summer time and one of the best (and easy!) meals to make, in my opinion, are salads! Over the next few days I will share some of my current favorites. The first one is a rice and bean salad. Mixed with a variety of vegetables, you could throw anything in this and it will come out delicious. Enjoy!
Mix rice, beans, and vegetables together in a bowl
In a separate bowl mix dressing ingredients together. Pour over mixed rice and beans.
Let cool in fridge for 20 minutes for a refreshing summer salad!
