Who doesn't love sweet potatoes?? Try them in your salad for a new way to enjoy them. Super refreshing and healthy!
Toss sweet potato in olive oil
Sprinkle with 1 tsp chili powder
Season with salt and pepper
Spread on baking sheet in one layer, bake for 420 degrees Fahrenheit for 15 minutes (or just done, not too soft)
Dice bell pepper, slice green onion, juice of 1 lime
Toss everything together (potatoes should be cool enough to handle, but still warm)
