We all have those days where we just don't feel like spending time cooking or preparing a nice meal. A recipe like this can be a life saver for days like those. All this meal takes is to prepare some couscous, sauté whatever vegetables you have in the fridge, and (voila!) you have a satisfying (and healthy) meal!
Sauté veggies with olive oil on medium heat until browned
Season with salt and pepper, plus additional seasoning of choice (Cumin, Thyme, Rosemary, etc).
Mix in with couscous.
Sprinkle fresh herbs like parsley on top.
Serve and Enjoy!
