Black Pasta with Tuna

If you have never tried black pasta before, this meal might look a little strange to you. Colored with octopus ink, this pasta goes best with some type of seafood, such as salmon or tuna. This recipe uses tuna, but feel free to replace it with whatever fish you prefer! I know in the image, the pasta looks more similar to worms than regular pasta (should I have not pointed that out?), but O.M.G this is meal is so delicious! Of course, if you can't find black pasta in your area, regular pasta will work just fine. Enjoy! 

 

 

 

Ingredients

 

 

  • 1 zucchini, medium

  • 12 cherry tomates, halved

  • 2 large garlic cloves, minced

  • 1 small shallot, diced

  • small pepper, diced

  • can of tuna, in water

  • crème fraiche or plain greek yogurt

  • parmesan cheese

  • red chili peppers, 1 tsp

  • salt/pepper to taste

  • olive oil

  • spaghetti 

  • optional: Italian seasoning

 

 

Directions

 

 

  1. Boil water for spaghetti, and cook according to package.

  2. In a pan, heat oil on high heat. Add zucchini until browned.

  3. In a second pan, heat oil on medium low heat. Add peppers, shallots, and red pepper, until soft.

  4. Lower the heat in second pan and add garlic. Don’t let it brown.

  5. In first pan, add a lot of black pepper and a little salt on zucchini. Then turn off heat.

  6. In second pan add cherry tomatoes and Italian seasoning. Then add 2 tbsp of crème fraiche, zucchini, and tuna and mix all together.

  7. Drain the cooked pasta and mix with sauce.

  8. Top with grated parmesan cheese and enjoy!
