I was happy to see that my basil plant not only survived while I was gone, but it grew like crazy! Not sure what that says about my gardening skills (hmm). Of course, I immediately wanted to make some homemade pesto. I used a blender, which, although it did work, I think a food processor would be better at blending all the ingredients together. Even so, pesto is hard to mess up and the flavor from fresh basil can't be beat!
2 cups of fresh basil
2 tablespoons of pine nuts (I used pumpkin seeds)
2 cloves of garlic, minced
1/2 cup extra-virgin olive oil
1/2 cup freshly grated parmesan cheese
In food processor or blender, place basil, nuts, and garlic. Blend while pouring olive oil in.
Once blended, add cheese. Blend briefly to mix all together.
If you are allergic to tree nuts, simply omit them from the recipe. Also, don't feel that you have to stick to pine nuts if you are adding nuts. I used pumpkin seeds I found in the pantry and it turned out just fine!
