Easy Week Night Dessert: Rice Pudding

This may not win most healthiest recipe on the blog, but it sure scores high on taste! The recipe only asks for few ingredients and the longest part of it is cooking up the rice (which you could do ahead of time). What you end up with is a filling and delicious dessert that will hit the spot on week nights (while lounging on the couch). I'm sure there are a ton of variations to this recipe, so if you have add an ingredient to your rice pudding that I didn't mention, please share in the comment section below!


  • 3/4 cup uncooked rice (I used brown, but most recipes ask for white)

  • 2 cups milk

  • 1/3 cup sugar

  • 1/4 tsp salt

  • 1 egg, beaten

  • 2/3 cup, raisins

  • 1 Tbsp butter

  • Small piece of vanilla bean or 1/2 tsp of vanilla extract


  1. Bring 1.5 cups of water to a boil. Stir in rice. Reduced heat to low, cover, and simmer for 20 minutes (or until the water is mostly absorbed).

  2. In a clean pan, add the cooked rice, 1.5 cups of the milk, sugar, and salt. Cook over medium heat until thick and creamy, around 15-20 minutes.

  3. Stir in remaining 1/2 cup of milk, egg, and raisins. Cook for 2 more minutes, stirring constantly.

  4. Remove from heat and stir in butter and vanilla.
