I am not a huge fan of mushrooms, so I was surprised to love this recipe so much. Consisting of only a handful of ingredients and a cooking time of a few minutes, this mushroom sauce will come out tasting like so much more! Seriously, the compliments you will get for this one won't feel right. It is just too easy to make! Of course, you don't have to tell anyone that (hehe).
I loved this with pasta. You really don't need anything else! Rice could be used instead, and if you are looking to add a little color to your plate, throw in some cherry tomatoes. Simple, fast, and delicious!
1 cup of mushrooms
1 garlic clove
Alcohol - 1/4 cup of white wine or a splash of brandy (you could use broth and a splash of lemon juice instead)
1/4 cup of Crème fraiche , heavy whipping cream, or sour cream (sour cream won't melt as nicely so it leaves the sauce a little thicker)
Chop and sauté the onion, garlic, and mushrooms until mushroom are tender.
Add the liquid. If using wine or broth, reduce liquid by half. No need to if using brandy. Stir in thyme, salt, and pepper.
Mix in the Crème fraiche (or heavy whipping cream / sour cream) until nicely melted.
Add to cooked pasta or rice and enjoy!
Optional: Add herb, like cilantro or parsley.
Pictured: Here meat was mixed in with the mushrooms. Great way to eat less meat without feeling like you are depriving yourself.
