Peanut Butter & Jelly Granola Bars


My schedule has been a little crazy the last few months. Between classes, volunteering, and work, I find myself spending a lot of time in the car driving from one commitment to another. Lately, I have been better about packing lunch for myself so I don't end up spending money and being tempted to go through a drive-thru. However, I still get hungry in between meals and sometimes find myself without anything. This can be problematic because I get a little hangry (hehe).

Granola bars are great snacks to throw in your bag for on the go, but they can be expensive and have more sugar in them than is really desirable. So, why not make your own?! I love these sweet treats because not only do they mostly consist of oatmeal which can help with those hunger pains, but it is easy to control the number of ingredients that are added in. There is also a lot of room for experimentation.

Prep: 10 minutes

Baking Time: 25 minutes

Yield: 6 bars

Ingredients

  • Vegetable oil, for pan

  • 1.5 cups of rolled oats

  • 1/4 cup of peanut butter

  • 1/4 cup of jelly or jam

  • 1 Tbsp of hot water

  • dash of salt

Optional: shredded coconut, flax seeds, pumpkin seeds, cinnamon, chocolate chips, nuts

Directions:

  1. Preheat oven to 350 degrees F.

  2. Grease a baking pan or dish.

  3. Pour oats into a large bowl.

  4. In a small saucepan over low heat, add peanut butter, jelly, water, salt, and any additional ingredients. Stir until smooth, about 2 minutes.

  5. Pour the peanut butter mixture into the oats and mix until oats are coated. Dump the mixture into baking pan or dish and press into an even layer.

  6. Bake in the oven for 25 minutes. The bars are done when the edges are toasty and brown.

  7. Leave in the pan until cooled completely, about an hour. Then slice into 6 bars.

I added a sprinkle of shredded coconut, flax seeds, pumpkin seeds, and a dash of cinnamon. They were a little more crumbly than your store-bought version, but so delicious and perfect for an easy, on the go snack!
