I am probably the only person that enjoys the smell of garlic on her hands after cooking with it. The smell of garlic is such a symbol for home cooking and delicious meals. Seriously, what doesn't taste good with garlic? Want your home to smell delicious and make everyone thing you are a pro in the kitchen?? Saute some oil and garlic on the stovetop. That's it! You don't even need to make an elaborate meal after. Just top in on some pasta, maybe add some cheese, and your guests will be wowed. Ok, maybe not all your guests are poor twenty something year olds that think any kind of home cooked meal is impressive. But the smell of garlic is sure to make most people feel right at home and excited to enjoy a meal together.
So in honor of this day, I am sharing a easy and quick recipe for mashed garlic potatoes. To take it up a notch I am roasting a whole garlic in the oven. If you haven't tried an oven roasted garlic before, get ready to have your mind blown! You can spread the wonderful gooey garlic on bread, top it on pasta, add it to a dish of sauted veggies, you name it! Today I will be enjoying the garlic with some mashed potatoes, because it makes me happy.
1 garlic clove
2 potatoes, baked
Preheat oven to 400 degrees F.
Peel and discard the papery out layers of the garlic, but leave intact the individual wrapped cloves.
Cut the top of the garlic off, exposing the tops of the individual cloves.
Place the garlic on a baking pan with exposed side facing up. Drizzle some oil on top, rubbing it gently in the garlic exposed.
Wrap the garlic with aluminum and bake for 30-35 minutes, until it feels soft.
Allow the garlic to cool before removing the sweet gooeyness with a fork from their skin.
Top the garlic on top of your baked potato and enjoy!
Optional: feel free to add additional toppings, such as cheese, salt/pepper, sour cream, etc.
