Minty Avocado Smoothie
It is that time of year where the sunny warm days seem to be here to stay. Here in North Carolina, it is still bearable to go outside, but between the nice breezes, you can feel the intensity of the sun already. The humidity and heat are edging closer, daring you to get too comfortable with the nice spring weather.
Every spring I re-explore the nearby parks and walking trails, wondering why I don't utilize them more in the summer. HA! Silly, don't you remember how suffocating the humidity here can be? When the sun isn't a long lost friend, but a cruel heat bearing down on you. Summers in the south to me is kind of depressing. It is so hot you can't spend time outside more than the few minutes it takes to get from your car into the safe indoors where A/C is most likely blasting.
I have been lucky to usually not spend the whole summer here, although I have to say that it really doesn't get bad until August. Still, this girl isn't a fan of heat and humidity so you can find me spending as much time as possible outdoors between now and the first day with the 90-degree weather.
And what goes perfectly with warmer days?? Smoothies of course! This minty avocado smoothie would go perfectly for an afternoon treat this upcoming weekend! It is pretty thick, but if you like your smoothies not to have the consistency of yogurt (to each their own) you can add more milk or orange juice to it!
Makes 1 small glass
1/2 frozen banana
1/2 orange (can just use orange juice, but I like adding the whole fruit for extra fiber!)
1 tsp flax seeds
3 tbsp of milk ( I used soy; you might need more to get a less thick smoothie)
few mint leaves (a little go a long way)
optional - 1 tsp maple syrup (for extra sweetness)
Add all the ingredients into the blender and blend until smooth consistency!
