The last few weeks have felt like a blur, to say the least. May was a busy month, yet it still felt strange to not have to go to class. I still sometimes run to my calendar to make sure that I really don't have to be somewhere right now. (Ha!)
Last day of classes, first days by the pool, graduation, family visiting, West Coast road trip, and then back to reality all in a matter of weeks.
As much fun May was, I will be enjoying the next few quiet weeks here in Raleigh before my next trip of the summer. And this extra time means more time making yummy recipes for the blog!
My latest creation is this super simple smoothie made with peanut milk! That's right, the latest nut milk has joined the grocery shelves. I am actually surprised it took this long for peanut milk to become a thing. Of course, I had to be extra and make my own peanut milk but really this just means I am cheap and wanted to use up the rest of my unsalted peanuts because who really wants those over the salted version??
This is very versatile! I made a thinner version because I wanted more of a lassi drink than a smoothie. However, if you want a classic thick smoothie, you could add oats, flax seeds, or even peanut butter to thicken it up.

Makes 2 servings
1 cup homemade peanut milk (can also buy it now at the store!)
1 frozen banana (freezing it prior makes the smoothie less runny and oh so refreshing!)
1/4 tsp cinnamon
1/4 tsp nutmeg
optional - for extra sweetness you could blend in a date or add maple syrup!
Blend all the ingredients together and enjoy!
