This recipe has a special place in my heart. My mom and I made a batch of these for my grandpa last Christmas. We sadly lost him last week at the age of 83. To say the last few days have been an emotional whirlwind would be an understatement. He had a long life and was surrounded by family and friends at the end, but that doesn't make saying goodbye any easier. I am thankful for the times I had with him and will forever remember his humor and sweet kindness that only grandparents seem to be able to pull off.
My grandpa like good food and one of his favorite things to snack on were nuts hence why we made a batch of sweet & salty roasted pecans for him.
Pecans are a great source of fiber, protein, and potassium. They also contain calcium, iron, vitamin b-6, and magnesium. Like most nuts, they are high in calories so it is a good idea to keep your serving sizes on the smaller end. 10 pecan halves have almost 100 calories, but they can be a perfect snack or a topping on a salad!
This recipe can make a great gift or enjoy it for yourself! I like enjoying a handful for a snack, but you could easily add these to a variety of recipes. Try to maybe not eat the whole batch in one setting though. :)
1/2 tsp salt
1/2 tsp pepper
1/4 tsp cayenne
1/4 tsp ginger
1/8 tsp allspice
1/2 tsp cinnamon
1.5 tbsp brown sugar
2 cups pecans
3 tbsp butter, melted
Mix the spices and sugar in the bowl.
Coat nuts with butter (about half of butter) and bake in 350 degrees F for about 10 minutes, until toasted.
Mix roasted nuts with the spices and remaining butter until well coated. Toast for additional 5 minutes in the oven, stirring and shaking pan frequently. Keep an eye on them to make sure they don't burn.
Let cool and then enjoy!
